This coffee, flown in from PNG’s Simbai region, grows in the jungle climate at a lofty altitude of 5,200 ft above sea level for an incredibly balanced and mellow profile. The washed processing creates an invitingly sweet and delicate acidity with tones of chocolate, berry and a hint of dried cherry tartness.

It’s balance withstands the intensity of an espresso shot, and really shines through with a french press, pour-over or drip extraction. It reminds us of Kona coffee, at a much more affordable price point.

We like a medium roast on the lighter side for most extractions. Don’t be afraid to try the light roast (especially for a french press or pour over)!
